It’s spring! The warmer weather is on the way and our plates become a playground of nutritious colourful ingredients.
A lot of people use the New Year to start afresh, but spring has always been an opportunity for me to start again, shake off the negativity and let go of the winter blues. I’ve had this recipe waiting to share with you for spring; its texture and taste is different… a good different. Thanks to my neighbour, Marieka, who shared this recipe; it is exactly what you need on your plate at this time of the year!
Use spring as your opportunity to try new recipes, be a bit more adventurous with your cooking and most importantly to start cooking with colour!
175ml Hot water
1 Packet Grenade Jelly
1 Cucumber, grated and drain juice
1 onion, grated
½ Cup Mayo
1 Tablespoon White vinegar
Salt & Pepper for taste
1. Mix hot water with jelly. Once dissolved, set aside to cool.
2. Mix mayo, then vinegar, cucumber and onion, the salt and pepper. Mix well.
3. Add cooled jelly.
4. Pour mixture into a mold or flat shallow dish.
5. Allow to set in the fridge for at least 2 hours.
